Sweet Potato Pupcakes for Halloween

Ingredients

For the Pupcakes

  • 1 cup sweet potato purée

  • 1 egg

  • 1 cup gluten-free oat flour

  • 1 tsp baking soda

  • ½ tbsp coconut oil

  • ½ cup plain, unsweetened kefir

(Optional toppings: plain yogurt “frosting,” crushed freeze-dried treats, or a cute pumpkin topper)

Instructions

  1. In a mixing bowl, whisk together the sweet potato purée and egg until smooth.

  2. Add the oat flour and baking soda, stirring until fully combined.

  3. Mix in the coconut oil and kefir to create a silky batter.

  4. Spoon the mixture into silicone cupcake molds (or lightly grease non-silicone molds with coconut oil).

  5. Bake at 350°F (180°C) for 30 minutes, or until firm and golden.

  6. Let the pupcakes cool completely — especially if you plan to frost them!

Store in the fridge for up to 4 days or freeze unfrosted pupcakes for later.
